Dorothy's Dream

Our first foray into natural wine making! Pét Nat, aka 'Pétillant Naturel' are sparkling wines which finish their fermentation in the bottle. They're fun, fresh and low in sugars as. For Dorothy's Dream we used our Riesling as a base, and with time it is now light, crisp and has a slight effervescent to it with out being a full sparkling wine. *Used under license.
